This traditional wheat has lower protein and sugars, making it ideal for pasta. It boasts higher levels of flavonoids and antioxidants, contributing to richer flavors and a broader nutrient profile.

Usage:
For homemade semola pasta, use a 2:1 ratio of flour to water, adding a pinch of salt. Example: 300g Senatore Cappelli semola, 150g water, a pinch of salt.
